Courgette & Thyme Spaghetti
Ingredients
- 1 Kg courgettes, sliced lengthways
- 8 garlic cloves, finely diced
- 4 Red chillies, finely diced
- 250 mls rapeseed oil
- 3 tbsp. lemon juice
- 10g fresh thyme, chopped
- 300g Parmesan, grated shavings
- 1 Kg brown rice spaghetti
- Lion Yogurt & Mint Dressing
Method
- In a zip lock bag add the courgettes, garlic, chillies, oil, lemon juice and thyme
- Season, mix well, seal and marinade for a couple of hours
- Boil the spaghetti until cooked
- Drain and return to the pan
- Add the zip lock bag contents and stir
- Serve with sprinkled Parmesan and accompany with Lion Yoghurt & Mint Dressing
