Courgette & Thyme Spaghetti

Ingredients

  • 1 Kg courgettes, sliced lengthways
  • 8 garlic cloves, finely diced
  • 4 Red chillies, finely diced
  • 250 mls rapeseed oil
  • 3 tbsp. lemon juice
  • 10g fresh thyme, chopped
  • 300g Parmesan, grated shavings
  • 1 Kg brown rice spaghetti
  • Lion Yogurt & Mint Dressing

Method

  1. In a zip lock bag add the courgettes, garlic, chillies, oil, lemon juice and thyme
  2. Season, mix well, seal and marinade for a couple of hours
  3. Boil the spaghetti until cooked
  4. Drain and return to the pan
  5. Add the zip lock bag contents and stir
  6. Serve with sprinkled Parmesan and accompany with Lion Yoghurt & Mint Dressing
