LEBANESE FATTOUSH SALAD

Ingredients

  • 75g Shredded iceberg lettuce
  • 30g Chopped cucumber
  • 30g Chopped tomato
  • 20g Shredded carrot
  • 20g Chopped red and yellow peppers
  • 20g Chopped radish
  • 20g Chopped white onion
  • 30g Chopped fresh mint and parsley mix
  • 1 Handful of pomegranate seeds
  • 50g Bulgur wheat or freekeh
  • 20g Lion Yogurt and Mint Dressing
     

Method

  1. Prepare all the chopped ingredients
  2. Prepare bulgur wheat or freekeh
  3. Mix together the shredded iceberg lettuce, chopped cucumber, chopped tomato, shredded carrot, chopped peppers, chopped radish and chopped white onion
  4. Stir through the prepared bulgur wheat or freekeh
  5. Stir through the chopped fresh herbs
  6. Dress with pomegranate seeds and drizzle with Lion Yogurt and Mint Dressing
