Louisiana Sweet Potato Skins


  • 4 medium sweet potatoes, washed and dried
  • Cooking Spray
  • 2 Spring onion chopped
  • 100g Cheddar cheese
  • 4 tbsp Lion Louisiana BBQ Sauce


  1. Preheat oven to 200oc
  2. Microwave sweet potatoes on high until tender, 8 to 10 minutes. When potatoes are cool enough to handle, cut in half lengthwise; scoop out pulp, leaving a ¼-inch shell
  3. Place potato skins, skin side up, on baking tray. Spray with Prep Premium Cooking Spray
  4. Bake 5 to 7 minutes; turn and spray again
  5. Bake until crisp, about 3 to 5 minutes more
  6. In a small bowl, mix together Lion Louisiana BBQ Sauce, Spring onion, and cheese
  7. Sprinkle mixture inside skins. Bake 2 minutes longer or until cheese is melted. Serve immediately
