Minced Beef Tortilla Stack
Ingredients
- 500g beef mince
- 1 white onion, finely chopped
- 1 garlic clove, finely chopped
- 2 tsp paprika
- 50mls Lion Cajun & Tomato Dressing
- 400g tin chopped tomatoes
- 2 tbsp. tomato pureé
- 1 tbsp. Worcestershire sauce
- 3 tbsp. freshly chopped coriander leaves
- 6 flour tortillas
- 100g grated Cheddar
Method
- Fry the mince, onion and garlic for several minutes until browned. Add the paprika, tomatoes, tomato purée and Worcestershire sauce
- Bring to the boil, simmer for 15 minutes and finally add the fresh coriander
- On a gastronorm tray place a tortilla and add a spoonful of the beef mince and a spoonful of Cheddar
- Bake in a hot oven for 10 minutes until the Cheddar melts
- Accompany with Lion Cajun & Tomato Dressing
