RAMEN NOODLE CHICKEN SOUP

Ingredients

  • 4 tbsp Prep Premium Toasted Sesame Oil
  • 4 tbsp Lion Korean Hot Chilli Sauce
  • 1 Small onion diced
  • 1 Chopped tomato
  • 1 tbsp Grated ginger
  • 5 cloves Minced garlic
  • ½ tsp Garlic powder
  • ½ tsp Celery salt
  • 500ml Vegetable stock/ broth
  • 100ml Water
  • 1 tbsp Soy sauce
  • 200g Chopped vegetables (carrot, celery, spring onions)
  • 50g Peas
  • 200g Ramen noodles
  • 100g Shredded cooked chicken thighs
     

Method

  1. Add the Prep Premium ToastedSesame Oil and Lion Korean Hot ChilliSauce to a pan and bring to the boil
  2. Add the chopped onion and tomatoand cook for 4 minutes stirringoccasionally
  3. Add the grated ginger, minced garlic, garlic powder and celery salt to the pan and cook for 2 minutes
  4. Add 2 cups of water and transfer to a blender/ food mixer and pulse until smooth
  5. Return the mixture to the pan and add the vegetable stock/ broth
  6. Bring to the simmer and add the soy sauce
  7. Add the chopped root vegetables and peas
  8. Simmer for 8-10 minutes.  Taste and adjust the seasoning as required
  9. Add the noodles and cooked chicken thighs and heat through for 2-3   minutes
  10. Remove from the heat and serve
