Sausage Muffin Cups

Ingredients

  • 4 Breakfast sausages
  • 4 Hash browns, thawed
  • 3 tbsp. salted butter, melted
  • 6 eggs, lightly beaten
  • 50g Fontina or Red Leicester cheese, grated
  • 1 red pepper, finely chopped
  • 20g fresh chives, finely chopped
  • Salt and black pepper
  • Tbsp Lion Brown Sauce

Method

  1. Grill sausages until cooked and cut into 1cm pieces
  2. In a bowl mix the hash browns, butter and season
  3. Divide evenly into a greased muffin mould and press down onto the sides and bottom of the muffin mould
  4. Oven bake at 180 °C for 10 minutes until lightly browned
  5. Remove from oven and divide the sausage into the muffin cups
  6. In a bowl mix the eggs, cheese, Lion Brown Sauce and pepper
  7. Spoon the egg mixture into muffin cups 
  8. Sprinkle with the chives
  9. Oven bake for 15 minutes until risen and firm
