Scrambled Tofu Breakfast Burrito
Ingredients
- 100g Extra Firm Tofu
- Pinch Turmeric
- Pinch Salt
- 50g Chopped Mushrooms
- 2 Tomatoes, sliced
- 100g Precooked Mexican rice
- 50g Cubed Potatoes
- 2 tbsp. Lion Cool Salsa
- ½ Chopped red chilli
- 20g Chopped Coriander
- 2 tbsp. Lion Sour Cream and Chive Dressing
- 1 Large flour tortilla
Method
1.Warm a little oil in a frying pan over a medium heat
2.Add the cubed potatoes and fry until just starting to turn golden
3.In a separate pan heat a little oil and add the crumbled tofu with the pinch of turmeric
4.Add the mushrooms and sliced tomatoes to the pan of potatoes
5.Fry together until the all the items are cooked
6.In a separate pan warm the salsa, chilli and chopped coriander
7.Layer up the tortilla with the warmed salsa, hot Mexican rice, scrambled tofu, sautéed vegetables and top with the sour cream and chive dressing
8.Fold the tortilla into a burrito fold and serve wrapped in foil to keep warm
