Stilton Croquettes

Ingredients

  • 1kg Desiree potatoes, peeled and quartered
  • 200g Stilton, coarsely grated
  • 2 tbsp. fresh leaf parsley, chopped
  • 3 tbsp. plain flour
  • 3 eggs, beaten
  • 100g fresh white breadcrumbs
  • Rapeseed oil for frying
  • Salt & black pepper
  • Lion Maple & Bourbon BBQ Sauce

Method

  1. Boil the potatoes and mash finely once soft
  2. Once cool add the Stilton, parsley and season
  3. Mould into a 3 inch cylinder and coat with flour, beaten egg and breadcrumbs
  4. Shallow fry or deep fry until golden brown and drain on paper towel
  5. Accompany with warmed Lion Maple & Bourbon BBQ Sauce
