Sweet Potato Bites, Garlic Flatbreads, Ham Tartlets & Pulled Pork Toasts

Ingredients

ROASTED SWEET POTATO BITES INGREDIENTS:

1 sweet potato, peeled and cubed
½ tsp Prep Premium Garlic Infused Oil
10g fresh rosemary, chopped
10g fresh thyme, chopped
Salt & black pepper

GARLIC FLATBREADS INGREDIENTS:

350g self-raising flour
Pinch sea salt
1 tsp baking powder
350 g natural yoghurt
2 cloves of garlic, minced
10g fresh tarragon, finely chopped
40g unsalted butter

TARTLETS INGREDIENTS:

4 eggs
200mls double cream
150g mixed chopped cooked vegetables
12 slices ham

PULLED PORK TOASTS INGREDIENTS:

2 slices thick gluten-free bread
20g salted butter
200g pulled pork
20mls Lion Hickory BBQ Sauce
2 to 3 slices American cheese

Method

ROASTED SWEET POTATO BITES METHOD:

In a bowl place all the ingredients and toss well
Place the cubes onto a baking sheet and bake in the oven at 200 C for 20 minutes until soft and crunchy

GARLIC FLATBREAD METHOD:

In a bowl add the flour, salt, baking powder and enough water to bind together
Tip out the dough, knead for one minute and set aside
In a pan melt the butter, add the garlic and tarragon, remove from the heat and set aside
Divide the dough into 12 balls and roll out on a flour dusted surface into cloud shapes
Cut several lines into the centre of each cloud leaving an inch at each end
Place a griddle pan on a high heat and cook for one minute on each side until char-grilled and blown up and brush the flatbreads with garlic butter

TARTLETS METHOD:

In a bowl mix the eggs, cream and vegetables
Line each hole of a muffin tin with a slice of ham
Pour in the egg mixture to fill each hole
Bake for 20 minutes at 160 C until the egg has set

PULLED PORK TOASTS METHOD:

Warm the pulled pork up and add the Lion Hickory BBQ Sauce
Toast and butter the bread and cut into 2 inch fingers
Top the toast with the pulled pork
Accompany all 4 dishes with dip pots containing Lion Hickory BBQ Sauce and Ranch Dressing
