Sweet Potato Rostis
Ingredients
- 500g sweet potatoes, peeled and coarsely grated
- 1 white onion, finely chopped
- 50g plain flour
- 2 large eggs, lightly beaten
- 180mls rapeseed oil
- 1 tsp salt & black pepper
- 100mls Sour Cream
- 100mls Lion Dijon Mustard
Method
- In a bowl add the sweet potatoes, onion, flour, eggs, salt and pepper
- Spoon 30g of the sweet potato into a small pancake and shallow fry or deep fry until golden brown and drain on paper towel
- Accompany with a dip made with equal parts of blended sour cream and Lion Dijon Mustard
