Sweet Potato Rostis

Ingredients

  • 500g sweet potatoes, peeled and coarsely grated
  • 1 white onion, finely chopped
  • 50g plain flour
  • 2 large eggs, lightly beaten
  • 180mls rapeseed oil
  • 1 tsp salt & black pepper
  • 100mls Sour Cream
  • 100mls Lion Dijon Mustard

Method

  1. In a bowl add the sweet potatoes, onion, flour, eggs, salt and pepper
  2. Spoon 30g of the sweet potato into a small pancake and shallow fry or deep fry until golden brown and drain on paper towel
  3. Accompany with a dip made with equal parts of blended sour cream and Lion Dijon Mustard
