Vegan Coleslaw

Ingredients

  • 2 Spring onions, finely chopped
  • 2/3 cup/175ml Vegan Mayo
  • 1 tsp Black pepper
  • 1 tsp Celery salt
  • 3 tbsp granulated sugar or sweetener
  • 2 tbsp Apple Cider Vinegar
  • 1⁄2 a Red cabbage, finely shredded
  • 1⁄2 a White cabbage, finely shredded
  • 3-4 Carrots, peeled and shredded
  • Salt (optional)

Method

Mix the first six ingredients in a large mixing bowl to make the dressing. Stir in the shredded cabbage and carrot and toss to coat. Add additional salt to taste.
