Whole-wheat Courgette Bread

Ingredients

  • 200g courgette, finely grated
  • 50 mls oil
  • 50 mls acacia honey
  • 2 eggs, lightly beaten
  • 1 tsp vanilla essence
  • 200g whole wheat flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp nuts, chopped
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 tbsp Lion Garlic & Herb Dressing

Method

  1. Blend all the dry ingredients
  2. Make a well in the middle and add the eggs, oil, honey, Lion Garlic & Herb Dressing and vanilla
  3. Stir until just mixed and fold in the courgette
  4. Pour the mixture into a greased loaf and bake for 30 minutes at 160 C until a toothpick comes clean from the center of the loaf
