6 slices of white bread, crusts removed
3 tbsp Basil Infused Olive Oil
225g/8 oz Mozzarella cheese, cut in to ¼” slices
3 plum tomatoes, cut in to ¼” slices
Salt and ground black pepper
15 fresh basil leaves
Leaf parsley to garnish
Preheat oven to 425°F. Cut each slice of bread into four equal squares. Brush each side with oil and bake for 3-5 minutes until pale gold.
Start each skewer with one piece of bread, slice of Mozzarella, slice of tomato, basil leaf, sprinkle with salt and pepper, then repeat.
Place on baking tray, drizzle oil over finished skewers, bake for 10-15 minutes until cheese begins to melt, garnish with fresh basil leaves and leaf parsley.
