Traditional Fish Batter

Ingredients

200g Plain Flour
10g Yeast
250ml Cold Water/ milk
Pinch of salt

Fillet of fish 

Method

1.Sift the flour and salt into a basin
2. Dissolve the yeast in a little of the water
3. Make a well in the flour, add the yeast and the liquid
4. Gradually incorporate the flour and beat to a smooth mixture
5. Allow to rest for at least 1 hour before using

Pass the Fish through seasoned flour before coating in the prepared batter.  Deep fry at 170C until golden.

For a lighter batter or to add flavour use sparkling water or beer
