Dirty Vegan Stuffed Jacket Potatoes

Ingredients

4  Baking Potatoes

4tbsp  Unsalted Vegan Whirl

100g  Vegan Mozzarella Cheese

100g  Shredded Jackfruit/ Vegan Shredded Chicken Alternative

50g  Finely diced red pepper

50g  Tinned, drained sweetcorn kernels

50g  Lion Louisiana BBQ Sauce

50g  Lion Vegan Mayo

1 tsp  Chopped parsley

Method


1.Preheat the oven to 180°C
2.Wash and prick the skins of the baking potatoes and thread onto a metal skewer
3.Place in the oven directly onto the racks with a baking tray on the shelf below
4.Bake in the oven for 1 ½ hours or until soft inside and a crisp skin
5.While the potatoes are cooking, heat 1 tbsp of the Unsalted Vegan Whirl in a heavy based saucepan
6.Over a high heat char the red pepper and sweetcorn kernels
7.Remove from the pan and place in a large bowl when charred
8.Once the potatoes are cooked, remove from the oven and cut in half
9.Scoop out the soft potato into the bowl with the pepper and sweetcorn, leaving a 2mm layer of potato on the skin
10.To the mixing bowl, add the unsalted Vegan Whirl, shredded Jackfruit and Lion Louisiana BBQ Sauce
11.Mix together thoroughly and then evenly spread the mixture back into the 8 jacket halves
12.Top with the vegan mozzarella cheese and return to the oven until golden brown and heated through
13.Remove from the oven and serve drizzled with Lion Vegan Mayo and chopped parsley
