Lamb & Mint Cobbler

Ingredients

  • 2100g minced lamb
  • 2g mint
  • 350ml water
  • 260g diced carrots
  • 260g sliced onions
  • 260g diced swede
  • 85ml tomato puree
  • 260g chopped tomato
  • 40g lamb bouillon
  • 1750ml water
  • 20g salt
  • 1.5g white pepper
  • 110g porridge oats
  • 220g plain flour
  • 150g Whirl
  • 0.5g thyme
  • Grated cheese

Method

1. Seal the lamb in a small amount of Whirl.

2. Add the lamb and vegetables to the water and place into a large cooking pot.

3. Cover with lamb stock and stir in the tomato puree, meat, mint and simmer for an hour.

4. Skim off any excess fat.

5. Season to taste.

Topping

1. Rub the Whirl, oats, thyme, 90% of the cheese and flour together until crumbly.

2. Once the mince has chilled place in a casserole dish and add the cobbler mixture.

3. Cover with the remaining grated cheese and cook in an oven at 350°F/180°C/Gas mark 4 for approx. 15 minutes.
