Vegan Tomato, Basil & Pepper panini
2 slices bread (sourdough used)
2 tsp Unsalted Vegan Whirl
5 thin slices of tomato
1/4 cup (handful) of fresh basil leaves
1/4 - 1/3 cup pepperjack Daiya cheese shreds (vegan)
2-3 thin slices roasted red or yellow pepper
1/2 cup baby spinach
pinches of black pepper
optional: onions, harissa, lemon juice, other veggies
- Spread Vegan Whirl on the outside sides of the bread.
- Warm up your panini press while you prep your veggies.
- Place one slice of bread, vegan butter side down on the panini. Add all the toppings and top with the other slice of bread, vegan butter side up.
- Press down on the panini press and grill for 2-4 minutes or until the cheese melts and bread toasts. Slice and serve
