Vegan Tomato, Basil & Pepper panini

Ingredients

2 slices bread (sourdough used)
2 tsp Unsalted Vegan Whirl
5 thin slices of tomato
1/4 cup (handful) of fresh basil leaves
1/4 - 1/3 cup pepperjack Daiya cheese shreds (vegan)
2-3 thin slices roasted red or yellow pepper
1/2 cup baby spinach
pinches of black pepper
optional: onions, harissa, lemon juice, other veggies

Method

  1. Spread Vegan Whirl on the outside sides of the bread.
  2. Warm up your panini press while you prep your veggies.
  3. Place one slice of bread, vegan butter side down on the panini. Add all the toppings and top with the other slice of bread, vegan butter side up.
  4. Press down on the panini press and grill for 2-4 minutes or until the cheese melts and bread toasts. Slice and serve
